The Grape Substitution

I like pineapple on pizza. There are people I love that do not. At my house everyone gets to put their own toppings on a pizza. When we buy frozen pizzas, we always get cheese. The way I see it, if you are going to eat something unhealthy, you should at least enjoy every bit of it! Anyway, the last time we made pizza, I realized we didn't have any pineapple. I'll be honest, I wouldn't eat pizza without it. I like it that much. So I decided to try an experiment. I used red grapes instead. I cut them in half and placed them cut side up on the pizza. It tasted amazing!! I have since used red grapes and pineapple interchangeably in any recipe. And the best part is that I now have ways to use those grapes at the bottom of the bag that are, shall we say, "less than crisp"?

Here is a recipe that was created intentionally for use with grapes. Try it and see how you feel about cooked grapes and then get busy substituting on your own!

Grapes and Rice Stir-Fry

1 tablespoon oil
1 cup sliced red grapes
1 cup cooked, cubed chicken or marinated tofu
2 cups cooked rice
1/4 cup chicken broth

Saute the grapes and chicken(or tofu) in the oil in a frying pan for 3 minutes or until the grapes are tender. Add rice and broth. Cook until warm, about 2 more minutes. Serve immediately.
